 PESTO PASTA SALAD

This quick and easy pesto pasta salad is always a crowd-favorite! Paired with a nice, juicy burger or your favorite grilled specialty, our pesto pasta  is sure to please.

It is great for cook-outs as it is not made with mayo.

INGREDIENTS:

  • 1 pound  whole wheat pasta or Ancient Grains lentil Quinoa pasta
  • 1 (12-ounce) jar roasted red peppers drained and roughly chopped
  • 1/3 cup basil pesto (jarred or home-made)
  • 1 ball fresh mozzarella cheese or provolone, diced (or combination of both!)
  • 3 handfuls fresh arugula or baby spinach (the arugula adds a spicy, peppery flavor
  • pint of cherry tomatoes halved or quartered
  • 1 cup diced zucchini

DIRECTIONS:

  1. Toss the pasta and the pesto making sure the pasta is well coated in the pesto. Stir in the remaining ingredients. Let sit, refrigerated, for 30 minutes before serving. Enjoy!
