Chocolate Chia Pudding

Ch-ch-chi Chia Pet… Remember that? Did you want one growing up? I did LOL. But the chia seed is more than the clay figure with the chia grass “fur”.  The seed is now part of a healthy lifestyle.


They have more antioxidant than any whole food, even blueberries.

One ounce (about 2 tablespoons) contains 139 calories, 4 grams of protein, 9 grams fat, 12 grams carbohydrates and 11 grams of fiber, plus vitamins and minerals. That fiber content is huge. Especially in our American diet where white bread, white rice and sugar cereal are prevalent.

They taste a little nutty, but are very mild in flavor. It makes it super easy to add  chia seeds to most cereal, sauces, vegetables, rice dishes, or yogurt or mixed into drinks and baked goods ( I use them in place of poppy seeds in my lemon “poppy seed” muffins. )  They are an excellent alternative to processed grains like white bread because it is a much healthier whole grain.

Yesterday I was CRAVING some chocolate, so I whipped up this super easy (and healthy)

Chocolate Chia Pudding

*½ cup non dairy, unsweetened milk (I used  Unsweetened cashew milk, but coconut milk would be DELISH TOO!)

*2 tbsp chia seeds

*1 tbsp maple syrup, liquid stevia, or honey

*Pinch of pink himylan sea salt

*½ tsp vanilla extract

*1 tbsp cacao or unsweetened cocoa powder

Stir to combine and pour into a small mason jar. Refridgerate for 4 hours.

NOTE: this has the texture of tapioca pudding. If you do not like that kind of texture, feel free to blend it in a blender until smooth

Calories: 133 Fat: 8 g Saturated fat: 1.2 g Carbohydrates: 17 g Sugar: 9g Sodium: 187mg Fiber: 8.6 g Protein: 5.3 g

Will this mighty chia seed help you lose weight? The jury is still out on that. Unfortunately, there is no magic bullet (or seed) for weight loss. If you want to lose weight, you’ll need to follow a healthy, calorie-controlled diet and get more physical activity.
