No Sugar Added Marinara Sauce

2  28 oz cans heavy tomato puree (look for no sugar added, I like Cento or Sun of Italy brand)

2 28 oz cans organic whole San Marzano  peeled tomatoes with basil (Cento is also good)

2 tbsp olive oil

1 small onion finely chopped

4 cloves garlic, finely chopped or grated

Splash of red wine

1 tbsp  Italian seasoning

1 tbsp dried parsley

¼ freshly grated parmesan cheese

  1. Heat oil in dutch oven or large saucepan over medium high heat
  2. Add onion and sautee until transluscent, about 5 minutes
  3. Add garlic and cook, stirring constantly another 2 minutes
  4. Add wine and cook another 2 or 3 minutes
  5. Add tomato puree
  6. Add whole tomatoes that have been slightly pureed in a blender to make as chunky or smooth as you like
  7. Add herbs, pinch of salt and pepper and parmesan cheese.
  8. Simmer for 30 minutes to an hour (or all day to really develop the flavors)

 

Notes: Look for San Marzano tomatoes as they are sweet and low acidic. And there is no need to add any sugar.
